Oats & Cashew Pancakes

Now that you’re on your journey to a healthier you, you may be thinking that pancakes are a thing of the past.  I totally thought that too.  I was shocked when I realized that I CAN still enjoy my beloved pancakes, but a healthier version.  This recipe not only let’s us enjoy what we love, but has a BIG protein punch.  Truth is that we have to keep living… the key is to eat the right portion sizes of the foods we love.

? Oats & Cashew Pancakes ?

Ingredients:

? 1 cup Oats

? 1/2 cup raw cashews

? 1/4 cup quinoa flour

? 1 & 1/2 cup of water

? 1 egg

? 2 Tbsp Vanilla Extract

? 1 Tbsp of Lemon Extract

? 1 Tbsp of coconut oil

? 1 Banana

Directions:

Cut Banana in slices & brown. Grind oats & raw cashews finely. Add egg, water, vanilla & lemon extract. Blend thoroughly. Cook in Pan until done. Garnish with grilled banana to the top.
